Vanilla Latte Cupcakes (Low carb, keto)

These vanilla latte cupcakes are topped with a creamy whipped cream frosting and taste like the popular coffee shop espresso drink. Made with low carb ingredients, they are also healthy sugar-free, gluten-free and grain-free treat.

Like many Americans, I admit to having an unhealthy obsession with Starbucks. They lured me in with the Caramel Macchiato in the late 90’s (Meg Ryan’s drink of choice in the movie “You've Got Mail”) and ensured my return with other tasty drink creations, baked goods, and treats. My love of their specialty drinks prompted me to purchase an espresso machine to make my favorite espresso drinks at home and save money.

Of course my versions had much less sugar than the originals, but they were hardly sugar-free. Nowadays, I rarely go to Starbucks, and although I order my cappuccinos and lattes with low carb and sugar-free ingredients, they’re still high enough in carbs to be an infrequent treat.

These vanilla latte cupcakes are an homage to what I opine is one of the best flavor combinations in corner-coffee-shop drink concoctions; vanilla, espresso and milk. The low carb batter boasts a healthy amount of vanilla and instant espresso while the creamy vanilla topping is nothing more than a stabilized whipped cream flavored with vanilla. All combine for great tasting low carb treat.

    This is so exciting!! I have been doing THM and definitely eat a lot of low carb but have only a few things and have been dying to try other products. It's hard to justify spending so much on things I've never tried especially when money is very tight.. thanks so much for doing this giveaway.

    You often use coconut flour in your recipes, however, I either have an allergy or sensitivity to coconut. Is there a substitute you could recommend? Maybe oat flour or increase the almond flour? Thanks for the help.

      Hi Lauri, you're right, I do like to combine the two flours to get a nice synergistic effect. Yes oat flour can be used, but it does raise the carb count. Oat FIBER can also be used, but it raises total net carbs because of all of the fiber and if too much is used can result in dry baked goods. Neither option is a straight substitute. I will keep your sensitivity in mind when I am creating something next time, but until then, here is a cupcake recipe I found on another blog. Adding the espresso powder to this recipe should be good. The recipe calls for 1/2 cup of honey, but I think that 1/3-1/2 cup Sukrin 1 or Swerve would be sweet enough. I would also sub melted butter for the coconut oil and heavy cream to make up for the honey - maybe start with 1/3 of a cup? Here is the link for almond flour cupcakes. Good luck. -Kim

    You had me when I read "latte" - one of my favourite drinks! These cupcakes look awesome, and I checked the recipe out over at All Day I Dream - yum. I just love it how by changing the ingredients you can turn a sugar bomb into a dish that is genuinely healthy AND tastes divine.

    I wish I had one of these in my hand right now! I've never been a big fan of sugary coffee drinks, so I still frequent Starbucks for plain coffee with heavy whipping cream. But I love coffee flavored desserts - and these vanilla latte cupcakes look amazing!
